Research Interests

Current research areas relate to biochemical and physiological aspects of human nutrition and milk. 

Specific interests include: mineral and trace element nutrition, interactions and bioavailability; cell culture model systems in nutritional physiology; mechanisms and regulation of transport of zinc, calcium and other nutrients; lactation and milk secretion; processing dairy products to reduce milk protein allergies; identification of food allergens.

 Recent projects have developed methods to measure zinc activity in milk and other fluids, and demonstrated zinc, calcium and ion transport in mammary cells line with the objective of better understanding physiology and nutritional requirements.
